There are fats that heal and there are fats that kill. Three of the "good guys" are among the 90 nutrients essential to human health that Dr. Wallach talks about in his book and on his tapes. They are the Omega 3 (n-3), Omega 6 (n-6) and Omega 9 (n-9) essential fatty acids or EFA. Omega 9 is not technically "essential" since the body can produce it but is often included since we must take in n-3 and n-6 to produce n-9.

Omega 6 is relatively abundant in our Western diet. Peanuts are rich in n-6 as is just about any vegetable oil: it's in butter, salad dressing, etc. But we are hard pressed to get enough n-3. Salmon, tuna and other cold water fish contain n-3, so do walnuts and flax seed and borage oil. Nevertheless the ratio of n-6 to n3 intake currently stands at 10 / 1 while 2/1 is best for ideal health.

With the intense emphasis the past 20 years on low fat diets a deficiency in n-3 intake has gone from bad to worse. The consequence is an increase in n-3 deficiency diseases: heart attack, stroke, chronic inflammation, allergies, rheumatoid arthritis, inflammatory bowel diseases, lupus, psoriasis, and scleroderma to name a few. Plus, since brain cells and cells in the retina are often first to become compromised due to inadequate n-3 intake some suggestion has been made that the increase in behavioral and sight disorders is related as well.

Our bodies consist of trillions of tiny cells each of which is a distinct living organism of its own. The health of the whole, the health of the body, is directly dependent upon and determined by the health of individual cells. Every cell in our body has a cell wall or outer envelope or "skin" made up of two layers of fatty acids attached two by two by a phosphorus containing molecule. But the cell membrane, as it is called, is not a mere plastic wrap isolating the cell from its surroundings. To the contrary, cell membrane actually serves as the media for all cell communication. The double layer membrane of each cell is packed with numerous molecules each with a specific role: proteins acting as filters or pumps for nutrients entering the cell or by products exiting the cell; glucoproteins for transmission and reception of messenger molecules; and cholesterol molecules for membrane fluidity. The fatty acids in cell membrane are subject to intense turnover so failure to keep the body supplied with adequate intake of n-3 degrades membrane quality and compromises cell function.

Besides serving as vital structural components of cell membrane, EFA's are the sole raw material for the production of prostagladins. Prostagladins are hormones which divide into two distinct categories. The first, category I, is manufactured or synthesized from n-6 EFA and serves to stimulate immune response. The second, category II, is synthesized from n-3 EFA and serves to slow down immune response. Interestingly, the body uses the very same tools and resources (the elongase and desaturase enzyme sets) to produce category I prostagladins from n-6 as it does to produce category II prostagladins from n-3 EFA. Thus, the overabundance of n-6 in our diet compared to n-3 monopolizes the available enzymes and, for many of us, results in an over stimulated immune response. This, in turn, produces a population with rampant chronic inflammation diseases and autoimmune disorders.

The following text from the National Institutes of Health (NIH) website explains what we are up against:

The immune system is a complicated network of cells and cell components that normally work to defend the body and eliminate infections caused by bacteria, viruses and other invading microbes. If a person has an autoimmune disease, the immune system mistakenly attacks itself, targeting the cells, tissues and organs of a person's own body. A collection of immune system cells and molecules at a target site is broadly referred to as "inflammation."

There are many different autoimmune diseases and they can each affect the body in different ways. For example, the autoimmune reaction is directed against the brain in multiple sclerosis and the gut in Crohn's disease. In other autoimmune diseases such as systemic lupus erythematosus (lupus), affected tissues and organs may vary among individuals with the same disease. One person with lupus may have affected skin and joints whereas another may have affected skin, kidney and lungs.

One way to bring immune response back into balance, to slow it down, is to increase n-3 intake. For most Westerners to accomplish this with diet alone would involve a fivefold increase in fish consumption paired with limiting intake of n-6 foods.
